This is a new wine for us and a style that you may not have tried before. Col Fondo translates to with the bottoms and means there is some sediment left behind, due it being undisgorged and unfiltered I have kept the pressure low so expect gentle bubbles, the beauty of this wine is that it will get better and better in bottle and will benefit from autolysis in much the same way traditional method sparkling gets better in bottle. Grape – Crouch Valley Bacchus
Appearance – light haze, gentle fizz
Aroma – pear, apple, lemon, elderflower
Taste – hedgerow, peach, lemon, apples
Food pairing – fish and chips and soft cheese
