We only make this wine in the ripest of years and 2022 was a great year in the vineyard, a hot summer meant massively ripe fruit in the vineyard, we also green harvested to make sure that all the sugars were directed to the fruit and not into the vines. At the winery we destemmed into open top fermenters and a wild ferment was allowed to develop, we gently plunged this fruit twice a day for 3 weeks and put the wines through a controlled MLF, following completion of both fermentations the wine was put into a mixture of new and old Bordeaux barrels, where it sat for 7 months. We then racked this wine and bottled no filtration.
Serve – room temperature or lightly chilled
Aroma – fresh damson jam, blackberries, spice.
Taste – ripe red fruit, blackberries, damson, fig pudding, soft tannin
Food pair – roast lamb, rare steak, charcuterie
